Traditional Irish Boxty

The Boxty is Irish, Celtic and easy to make.

This is the recipe used by Niall's grandmother, which she assures him has been passed down for many generations of his family:

  • 1.5 cups grated potatoes
  • 1 cup flour
  • 1 cup leftover mash
  • wee bit of milk
  • olive oil to your desired consistency – about a ¼ cup
  • 1 or 2 eggs

Mash it up to a griddle cake, cook it to a golden brown.
